Job Description:

The Quaaout Lodge & Talking Rock Golf Resort is looking for an Executive Chef to bring their experience and industry knowledge to a passionate and energetic culinary team.


This is a phenomenal opportunity for a versatile hospitality professional to integrate their service and cuisine vision in a unique and captivating environment. You will inspire and mentor our kitchen staff, while ensuring our food program is unique and of the highest quality.
This role is best suited to an ambitious, hard working person who has mastered the fundamentals of food preparation and would like to utilize this knowledge to help other succeed and learn in the industry.


An important focus will be placed on the incorporation and fusion of the local Secwepemc First Nations culinary, heritage and culture.

Responsibilities:


• Organize, direct, and evaluate food quality levels based on well-defined service expectations.
• Manage, motivate, schedule, recruit and train kitchen staff while ensuring HR policies are followed (appraisals, discipline, etc.)
• Purchase and control of food inventory, continually using resourcefulness to improve the overall profitability
• Assist with planning, implementation and execution of special events including theme evenings and wine maker’s dinners
• Manage spoilage and waste and staff competencies in this area, so as to optimize and sustain profitability
• Attend meetings and contribute to resort strategy and policy making
• Ensure health and safety regulations are followed
• Manage costs and all factors effecting the profitable performance of the resort
• Utilize support from suppliers to bolster the overall operation
• Develop relationships with current and future suppliers
• Work with Catering Sales Manager to facilitate all operational aspects of events, parties, and banquets within the resort; creating a seamless and cherished experience for our clients
• Develop personal skill and capability through on-going training and mentorship
• Monitoring kitchen financial performance, recognizing discrepancies, and reporting to executive team
• Build a collaborative relationship with Food and Beverage Manager to provide unified team approach to excellence in food quality and service
• Work directly with Resort Manager to develop future budgets and ensure that they are achieved
• Proactively manages labour to achieve budgetary expectation and is responsive to levels of business
• Directly cooks and supports the line during peak time periods or during service that requires skillful preparation
• Embodies a high level of professionalism, and leads by example to mentor staff
• Provides training and professional development opportunities for all kitchen staff
• Periodically visits dining area to welcome guests and perform quality checks
• Perform other duties as directed


Knowledge, Skills, and Abilities:


• 3+ years of high level management/supervisory experience is required
• Foodsafe and serving it right required
• Well-developed business acumen and an entrepreneurial mind set.
• Strong leadership and mentorship attributes
• Operationally savvy and an ability to assist during peak periods
• Flexible schedule
• Inventory management
• Strong knowledge of food and menu design
• Catering / banquet experience
• Ability to maintain poise and focus in fast paced environment
• Must be able to meet the physical requirements of the job including the ability to stand for extended periods of time and repetitive lifting of 30-50lbs.
