The menu will host a variety of items thoughtfully crafted and

presented. We encourage sharing our plates with your fellow guests in

order to experience the vast range of cultural influences. Our servers

are casual in their approach but educated, and professional.

Everything we serve is made in house with quality seasonal products;

from bread baking and rolling pasta, to butchering our own meat.

We are looking to recruit a Chef to a fast-paced, disciplined, and

respectful environment that fosters ongoing learning and growth.

 

Overseeing the grill/saucier section, and working alongside with

others, you will lead to organize the daily kitchen operations. You will

be setting the example of professionalism and organizational

excellence in order to execute product consistency at the highest of

standards.

Responsibilities include:

 Ensure food quality is at the highest standards established food

quality and plating specifications.

 Ambassador of our organization.

 Driving knowledge around our food and beverage program for

Macau style Portuguese & Chinese cuisine.

 Hospitality and salesmanship.

 Ensure compliance of all standards and procedures relating to

HACCP and provincial workplace safety standards.

 The successful candidate is expected to be a leader,

demonstrating behaviors that align with our culture of

improvement, growth and executing with excellence. 

 Responsible for timely progress through the Culinary Leadership

Certification Program, and continued learning and development

over time as required.

 Knowledge, Skills & Qualifications:

 Open to learning, coaching and career growth

 Diploma in Culinary Management and /or Chef Accreditation is

preferred.

 Experience with Macau style Portuguese & Chinese cuisine, is

preferred.

 Experience with Northern Chinese Cuisine (dragging noodle), an

asset.

 Minimum of 5 years of operational experience in a high volume

restaurant specializing in Asian Cuisine. Experience in Chinese

cuisine will be given priority consideration.

 Strong knowledge of HACCP and food safety standards.

 A strong foundation in communication and Leadership skills that

can be built on.

 Driven and focused to execute with excellence.

 Inspirational and motivational.

 Ability to communicate in English, Chinese and/or Portuguese

will be preferable.

Duties will include:

 Full ownership of your station - from preparation to execution

 Supervise and coordinate activities of cooks and kitchen workers

engaged in food preparation, cooking, garnishing and

presentation

 Lead in the creation of new spicy dishes in order to expand

current menu selection. Determine dish names and assign

pricing based on cost.

 Check for quality of expensive raw foods upon delivery to ensure

its freshness.

 Demonstrate and instruct cooks techniques in making delicate

handcrafted pastries, dim sum and specialty buns etc.

 Demonstrate and instruct cooks on handling fresh seafood such

as king crabs, Geoduck, Hokkigai, Salmon, Scallops, pigeons,

squabs, pig trotters, etc. Ensure all fresh seafood are prepared

with the least amount of wastage. 

 Demonstrate, instruct and supervise team of cooks with

preparation, marinating and roasting of suckling pigs, specialty

baked chicken, crispy squab, pigeons etc.

 Continuing the development of your skills set, and setting the

example for the rest of the team.

 Providing you with the foundation to one day run your own

kitchen and create your own menus.

 Sharing in the duty of daily ordering for the menu and for

features that are run throughout the week.

 Maintaining the kitchen cleanliness standard of yourself and the

team.

 Increasing the customer base with applying your skills set with

care for our guests

Successful candidates will have previous kitchen experience and/or a

culinary education, be passionate about food, and are committed to

personal growth and career development.
