1024917 BC Ltd. dba Victoria Sushi at 100-176 Wilson Street, Victoria, BC, is looking for a sushi chef with more than 3 years of commercial cooking experience. Experience cooking Japanese food is a great asset, and moderate physical strength is also an asset for required lifting of crates. This is a full-time position that may include late evening and weekend shifts, as we are open 7 days a week from 11:30 a.m. to 9:00 p.m. The successful candidate should be friendly, outgoing, and helpful, and will be required to perform the following duties:
- Prepare and cook a wide range of Japanese dishes.
- Develop new and creative recipes, daily specials, and seasonal dishes.
- Plan cost-effective menus, determining food requirements, portion sizes, and estimated costs.
- Ensure food quality meets a consistently high standard.
- Maintain inventory, including records of food and other supplies, food quality, and equipment.
- Order more supplies when required.
- Ensure operation level profitability and client satisfaction.
- Train and supervise kitchen staff in the preparation of Japanese food by transferring expertise along with menu concepts and designs.
- Perform related work as required.
Qualifications:
- Over 3 years of commercial cooking experience or an equivalent combination of experience and training (i.e., graduation from a culinary arts program would be a major asset).
- Completion of high school.
- The ability to speak Korean is an asset but not required, as the owner's primary language is Korean.
