Education Requirement: Techincal training from recognized institute.
Experience: 2yrs with demonstratable successful record.
This is a hands-on position.The successful candidate will be responsible for all the activities described below and any others that may arise. The applicant will be responsible for:
Harvest and Crush:
- Ordering materials and suppies for the upcoming season in a timely manner.
- The determination of optimum maturity levels for grapes to be harvested for styles that have been predetermined.
- The completion of all records regarding the advance of maturity and final levels.
- Maintaining laboratory, ordering necessary materials and supplies for conducting all basic operations, performing all laboratory operations, including (but not limited to) pH levels, acidicity, alcohol, SO2 and residual sugar.
- The receiving, processing adjustment of SO2 and any enzyme additions.
- Proper allocation of storage facilities.
- Ongoing clean-up and sanitization of equipment and crush pad.
Fermentation:
- Responsible for all records regarding fermentation from beginning to endpoint in a timely, thorough and accurate manner.
- Determining any adjustments or additions that may be required to achieve a desired endpoint.
- Conducting all fining, yeast and their nutrient additions, conducting malolactic fermentations, identifying and correcting faults or unwanted conditions in the wine, determining optimum conditions to conduct fermentation.
- Maintaining all equipment and environment in a sanitary condition.
Finishing and Bottling:
- Responsible for all clarification and filtration operations,determining any additions or adjustments as may be required to achieve the desired endpoint.
- Responsible for an organoleptic determinations as may become necessary and any blending operations as required.
- Ensuring all wines are fit for bottling and maintaining complete records for all bottling operations.
- Scheduling and conducting all bottling operations including filling, capping and labelling and ensuring the final product meets or exceeds all expectations.
- Responsible for ongoing sanitation of bottling equipment.
Expected length of contract 300-400 hrs
$37/hr
