The Congregation is seeking another member in the form of a Lead Cellar Hand who will assist the Winemaker and Assistant Winemaker with the following duties.
- Wine transfers, blending, barrel work, ingredient additions, filtering of wine, juice, and lees, racking, inoculating juice, managing white and red ferments.
- Operate winemaking equipment - pumps, filters, presses, crusher destemmer, bottling line.
- Train and supervise seasonal crews.
- Receive, weigh and maintain accurate records of incoming grapes.
- Execute crushing and pressing operations as per the crush plan.
- Monitor brix and temperatures of ferments.
- Perform bottling procedures including line set up, sanitization and sterilization, bottling, QC and production reports, line shut down.
- Maintain high levels of cleanliness in the Winery.
- Complete grape sampling of on- and off-site vineyards along with juice analyses (brix, titratable acidity, and pH).
- Enter and retrieve data from Winemaker’s Database.
- Ability to lift 55 lbs, be physically fit, and work at heights.
- Must be available for shift work - including weekends during vintage.
- Participate in tasting trials.
- Assist with the preparation and shipment of wine to off-site warehouses, including documentation.
- Loading and unloading of transport vehicles.
- Assist in the Lab when required doing wine and juice analysis, and preparing lab blends and trials.
- Wage will be competitive and commensurate with experience.
To be blessed: You will have completed a Science degree and have had at least 2 years experience in the cellar. You must be a team player, with a valid forklift license. You should remember that cleanliness is next to godliness, and you should practise what you preach. Singing like an angel is an asset.
