The Kitchen at Fort Berens is hiring for the 2019 season. We are looking for a qualified, passionate and on-hands Executive chef.
Working with local farmers we offer a true farm to table experience. The Kitchen offers indoor and patio seating with stunning vistas of our vineyards, the Fraser Benchlands and the Coast Mountains. Guests come to experience our warm hospitality, award-winning wines and the finest bounty from Lillooet. We invite them to discover Lillooet’s compelling, regional cuisine featuring fresh and local ingredients.
Responsibilities
The executive chef is responsible for all culinary activities for the restaurant. Responsibilities will include, amongst other things:
- Purchase food and supplies from vendors and manage inventory
- Develop and manage annual budget
- Lead menu development and recipe creation and perform item pricing
- Maintain kitchen area and equipment
- Hire, train and supervise kitchen personnel
- Assist kitchen staff with food prep
Qualifications
- Two-year culinary diploma or degree preferred
- 4+ years’ of progressive experience in the culinary and hospitality industry
- Must possess culinary creativity
- Strong knowledge of ingredients, culinary techniques, presentation
- Firm commitment to food safety standards, sanitation regulations and cleanliness
- Comfortable providing direction and supervision to kitchen staff
- Attention to detail, positivity, ability to work under pressure and self-motivated
This position regularly requires long hours and weekend work.
