GENERAL CELLAR AND LAB DUTIES
- Ensure smooth daily operations of cellars and laboratory including planning activities to meet schedules and deadlines
- Safe operation of equipment (filter, presses, bottling line and labeller, forklift, etc.) including training on safe operational practices and procedures
- Ensure that annual testing and fitting of safety equipment and PPEs are being arranged in a timely manner
- Utilize cost effective strategies in all winemaking processes
- Ensure that monthly bulk wine inventory is accurate and updated in coordination with special projects coordinator/logistics coordinator
- Order and keep full supply of cellar supplies and ingredients
- Maintain cleanliness in all cellars and keep lab clean and orderly
- Work collaboratively with other department to ensure information is available to them in a timely manner as requested and establish methods to coordinate work activities with other departments
- Be able to perform lab tests & bench trials analysing all grapes juice and wine via wet chemistry and with automated lab instrumentation
- Accurately track/document wine making ingredient use by tank/batch to ensure traceability, (includes harvest information and documentation), using the wine making software system
- Prepare reports as required
- Any other duties as assigned by management
BOTTLING LINE OPERATIONS
- Plan and staff bottling line in accordance with planned schedules
- Efficiently use all resources and labour to maximize productivity and minimize costs
- Ensure proper procedures for bottling line sterilization and filtration are followed with proper testing and sampling methodology being used.
TANK MANAGEMENT
- Responsible for ullge management for all vessels, ensuring that all potential problems and risks are identified on a regular schedule (weekly)
- Ensure appropriate corrective measures are undertaken
GENERAL STAFF SUPERVISION
- Schedule and supervise the daily activities of cellar staff
- Oversee inventory of supply materials for cellar operations
- Work with staff to establish maintenance schedule needs for all equipment and ensure these are being followed
- Ensure wine control files and laboratory records are updated and accurate
- Ensure staff are cross trained sufficiently that all job duties can be covered in the short term by at least one other staff member if needed, preferably more
- Encourage an atmosphere of cooperative teamwork and collaboration
LEADERSHIP/MANAGEMENT
- Assign positions for cellar staff and delegate responsibilities effectively
- Communicate job responsibilities to all production staff to ensure subordinate staff fully understand their duties and responsibilities
- Liaison between senior management and production staff regarding concerns and issues as required
- Provide safety orientation and training for staff
- Ensure subordinate staff understand safety policies and procedures and work in accordance with standards
- Assist with hiring, staff development and performance management procedures as appropriate
JOB SPECIFICATIONS
EDUCATION/EXPERIENCE
Post-secondary education in oenology and/or vitaculture required
Post-secondary education in microbiology or chemistry an asset
5 years of experience in the wine making industry
Knowledge of HACCP an asset, but not required
