Job Description: VQA Red Winemaker-
- Produce Red VQA and Domestic (components for ICB) wines of exceptional quality that meet style requirements;
- Monitor & evaluate quality and ripeness of red grapes during Vintage and work with Viticulture department to organize harvest;
- Monitor Red VQA and red domestic wine storage re quality and timeliness of activities;
- Manage Red Winemaking requirements to meet VQA and Non-VQA quality status.
- Assist Commercial or White VQA Winemakers; Act as the Backup Winemaker to the Commercial or VQA White Winemaker & Senior Winemaker.
- Work with Niagara Estate winemakers to facilitate their winemaking needs from crushing to finishing for all Red wines produced at Dorchester for those Estate brands;
- Provide support to the Estate Wineries to facilitate bottling of all red estate wines at Dorchester facility;
- Collaborate with Marketing and Supply Chain departments to implement requirements and forecasts for Red VQA brands at Dorchester;
- Work with Senior Winemaker in developing and ordering the vintage Raw materials requirements for red wine production;
- When required lead both salaried and unionized hourly people in aspects of winemaking and maintenance in accordance with the OH&S act and other various government agencies.
- Perform a variety of other functions including trials of different wine making methodologies, capital requests, ROI recommendations and new business strategies.
- When required, develop Standard operation procedures and co-ordinate H&S initiatives in compliance to H&S legislation;
- Provide/organize training for Cellar employees when necessary; Report any environmental issues and implement corrective actions if required;
- Work with the rest of Commercial Winemaking team on Cellar integration within ISO scope;
- Manage blend requirements and bottling review tasting;
- Assist in the use of any XS VQA Red wines to find best fit brands were needed;
- Issue regular sample and top samples analysis for VQA and domestic red wines;
- Follow up and adjust out of spec parameters;
- Issue, follow up and enter in WIS, WT, Trial blends and BA; Update WIS with red VQA and domestic WT;
- Assist in the management of the cellars budget;
- Other duties as assigned;
Job Requirements-
Skills: · Good organisational skills with an ability to adapt to changing circumstances; Good innovative approach to problem solving; Recognisable tasting and organoleptic capabilities and skills.
Working Conditions: Longer working hours during harvest and business requirements. Frequent periods are spent standing or sitting in the same location with some opportunity to move about. Occasional exposure to factors such as temperature extremes, moving machinery, noise, and fumes which cause noticeable discomfort. Regular need to give close attention, either hearing or seeing, to what is happening. There is continuous pressure from deadlines, production quotas, accuracy or similar demands. Unpleasant contacts and/or concern about unpleasant situations are frequent. Moderate disruption of family/social life.
Experience: · Minimum 5 years winery or vintage experience, with at least 3 years in an Assistant Winemaker role.
