We are looking for a dynamic experienced Chef to lead the culinary activities of Heartstone at The Prairie Creek Inn, a casually elegant 50 seat restaurant in our exclusive country inn and small resort located 17 km south of Rocky Mountain House, Alberta, Canada. 

 

Heartstone offers a casual fine dining menu using fresh, regional, and seasonal ingredients, including Alberta beef, bison, elk, game and fish. We also feature internationally inspired dishes, made in house desserts, and fine wines and spirits. The restaurant provides dinner service 4 nights per week for guests of the inn and the public on a reservation basis, plus services corporate retreats, weddings, and complimentary breakfasts for overnight guests.

                                                 

We want an experienced, ambitious and professional chef who is passionate about creating new culinary delights while enjoying a quiet, high quality rural lifestyle in our friendly family run operation. The right candidate will enjoy increased status in the culinary field as Heartstone builds upon its reputation as the place to dine in Central Alberta, and a highly recognized culinary tourism destination.

 

Key responsibilities:

 

·         Be hands on and perform all food prep, line cooking and plating duties for up to 50 covers per night.

 

·         Train and manage additional kitchen staff when required.

 

·         Handle all sourcing, ordering, receiving, stocking, invoicing and inventory control duties.

 

·         Maintain a clean kitchen and perform all levels of cleaning duties including dishes.

 

·         Maintain food cost control and profit margins, keeping records against goals and budgets.

 

Qualifications required:

 

·         At least 3 years experience in a professional kitchen, preferably for a casual fine dining restaurant.

 

·         Certification or diploma from an accredited culinary or food services program - Red Seal a bonus

 

·         An impressive repertoire and a flair for creating new and innovative menus and plating techniques.

 

·         Mature, dependable, organized, professional, well groomed and able to work under pressure

 

·         Must have own transportation and a valid driver’s license.

 

·         Must speak fluent English. 

 

MUST HAVE LEGAL PERMISSION TO WORK IN CANADA.  DO NOT APPLY IF NOT IN PLACE.

 

Staff accommodation is not available on site. Housing is available a 12 minute drive away in Rocky or in Red Deer, 1 hour away.

 

Starting date:   Immediately

$55,000 to $60,000 per year depending on experience.
