SUMMARY:

The Dining Room Sommelier will have a passion for excellence in guest service, experience in developing wine programs and extensive knowledge of wines and wine pairings. They will assist with direction and of the Sonora wine program including supervising and training direct reports on wine program and ensuring a world class fine dining experience for our guests.

EDUCATION & EXPERIENCE:

  • Five (5) years of experience in fine dining service.
  • One (1) year of supervisory experience, preferably in a fine dining setting.
  • Thorough understanding of the operations of fine dining; experience in a live-in resort environment is preferred.
  • High School Diploma required; any additional education or experience in Food and Beverage, Hospitality, Tourism or related fields would be an asset.
  • WSET qualifications, 1, 2 and 3 or ISG Sommelier certification required.
  • Comprehensive knowledge of Wine, Spirits and Alcohol.
  • Must be fluent in English, second language an asset.
  • First Aid & AED certificates are an asset.
  • Must have valid serving it right number

DUTIES, RESPONSIBILITIES & TASKS:

Daily Operations

  • Create and update wine list in coordination with the Dining Room Manager.
  • Ensure proper wine service is prepared for guests including stocking glassware.
  • Knowledgeable of daily specials, menu changes, wine lists, wine pairings and key guest notes.
  • Recommend food and wine pairings; advise guests based on personal choice and taste including varietals, price, etc.
  • Conduct wine service following Sonora’s protocols.
  • Follow company procedure to bill for or collect payment for chargeable items.
  • Assist Dining Room manager to manager reservations and floor plans; host and seat guests as required.
  • Assist serving staff as required to execute service as required including ordering beverages and processing POS system.
  • Assist with expediting dishes from kitchen line as required.
  • Manage wine cellar and ensure its fully stocked.
  • Conduct monthly inventory of all beverage and stock in coordination with the supervisor and department manager.
  • Assist department manager with administrative work including but not limited to; inventory control, purchasing processes of wine cellar.
  • Negotiate purchase prices with vendors.
  • Ensure front and back of house cleanliness is kept to the highest of standards.
  • Ensure effective working relationships and clear communication is maintained with all colleagues and departments.
  • Ensure the financial success of the department by monitoring productivities, revenues and costs; recommend appropriate procedures or programs wherever necessary to department manager.
  • Drive small electric vehicles around the resort.

People Management and Training

  • Set expectations and hold team accountable for demonstrating desired service behaviors in accordance with Relais and Chateaux expectations.
  • Conduct ongoing education and training opportunities for staff including; wine tastings, new product sessions, cocktails and features.
  • Train staff on composition of dishes for changing menus and wine pairings.
  • Supervise staff in their daily routines and responsibilities regarding wine and bar knowledge.
  • Follow effective employee relations practices including supporting all in-house training, maintaining professional supervision of all employees, evaluating performance on a timely basis, and following all progressive discipline and documentation guidelines as requested from department manager.
  • Provide supervision, direction and leadership to the team to achieve department goals.
  • Coach and evaluate staff on developing professional and effective selling skills.

Company and Department Responsibilities

  • Recognize that Sonora Resort is a service-oriented organization and act accordingly.
  • Ensure good communication daily with the department manager on all issues, particularly those affecting customer services, employee relations and the economical operation of the department.
  • Reflect sound employee relations and a positive attitude towards Sonora Resort & London Drugs.
  • Assist Senior Management and Human Resources when requested in all disciplinary actions.
  • Attend staff meetings as requested.
  • Understand and adhere to all guidelines as set out in company policies.
  • Maintain a professionally groomed appearance that reflects positively on the company.
  • Contribute exciting and innovative ideas towards the ongoing improvement of the department and the Sonora Resort as a whole.
  • Perform any other reasonable duty or assignment requested by the department or General Manager.

HEALTH & SAFETY:

  • Be aware of and promote safety standards to ensure both employee and guest health and safety.
  • Create and maintain a safe, fair, and harassment free environment for all employees and guests.
  • Understand and adhere to all emergency procedures including evacuation and fire drills.

PHYSICAL DEMANDS:

  • Physically demanding tasks in a fast-paced environment with tight deadlines.
  • Repetitive tasks, handling heavy loads, combination of standing, walking, or sitting for extended periods of time, bending, crouching, kneeling.

WORKING CONDITIONS:

Must possess valid work authorization to work in Canada. Sonora Resort is unable to assist with obtaining work authorization.

SONORA RESORT LIFE: Sonora Resort is a remote Resort located on Sonora Island in the Discovery Islands of British Columbia; this position is required to be on site during the operational season Mid April - October. Shift work is required; a regular shift is 10 - 18 working days and 4 non-working days and is subject to change during peak season; employees are expected to be flexible in their scheduling to meet the needs of the business.
