Assistant Cider Master – Full time

Colio Estate Wines Inc ( Colio ) owns the Thornbury Village Cider and Brew House. Established in 1980, Colio Estate Wines Inc. continues to be one of the leaders in its industry. From humble beginnings, we have grown over the last 40 years and are now producing in excess 600,000 cases of quality wine annually. Some of our award-winning brands include Girls’ Night Out, Bricklayer’s, Backroads and Colio Premium House brands.

Our Brewery produces award winning craft Pilsners (Pick up 26), Amber lager ( Ladder run ) and Ales ( Clark Session IPA ). Our Pick-Up Pilsner and Ladder Run Amber Lager have both won Best in Country at the World Beer Awards. The Brewery will be housed in a new purpose built extension.at our Thornbury location.

Our Cider House produces the multi award-winning top selling Craft Cider at the LCBO. We produce several ciders, such as Thornbury Premium Apple Cider, Cranberry Apple Cider, Honey Crisp Apple Cider, Spiced Apple Cider and Wild Blueberry Elderflower Apple Cider. We offer other ciders at our on-site retail store and Tap room.

We pride ourselves on using only top quality ingredients and 100% fresh-pressed Ontario apples.

In addition, we represent a range of international brands such as Warsteiner Brewery from Germany, Portobello Road Gin, Cumulus Estate Wines from Australia, Frisky Zebra from South Africa and a number of other international wine suppliers.

At Thornbury our passion is to make the very best beer & cider. Our style is to craft slow-fermented small-batches “In no particular hurry”. We produce a range of sizes in various containers – bottles, cans and kegs.

As part of our expansion and succession planning strategy, we require an additional full-time Assistant Cider Master at our Thornbury location. This position will report to the Cider Master and will work closely with the current Assistant Cider Master.  This position will focus on the day-to-day execution of our cider production and play a lead role in our innovation program leading to opportunities for future advancement depending upon the candidate’s qualifications, abilities, character and passion for everything related to craft cider.

Position Summary

  • Responsible for all aspects of cider-making including fermentation, aging, filtration, carbonation, finishing various ciders.
  • Cleaning and sanitizing of tanks and equipment.

  • Perform quality testing throughout the cider making and packaging process.

  • Perform sensory evaluations of the ciders: appearance, aromas, flavours, body, and finish.

  • Create and update records ensuring the accuracy and validity of information.

  • Potential to assist the Cider Master in creating new cider flavour and blends, depending upon understanding, experience, sensory evaluation abilities and aptitude.

  • Methodical with strong attention to detail & accuracy to ensure we produce consistent, high-quality cider.

  • Able to communicate clearly and effectively both written and verbally.

  • Creative thinker that posses strong problem-solving skills, individually and in a team setting.

  • A self-starter with high energy levels and a “does what it takes” attitude.

  • Require the ability to assess the flavour and aromas of all ciders.

  • The ability to maintain confidentiality with formulations and unique processes is required..

 

Work Conditions:

  • The working environment within the cidery cellars area is maintained at a constant 13C.

  • Overtime may be required from time to time, depending on production requirements.

  • Hours of Work: Day shift Monday to Friday. A modified schedule may be required during the spring and summer months.

 

Work Experience Assets:

  • Cider making experience in a Cider House or Winery setting.

  • Experience with filtration and pumps.

  • Experience with Quality testing such as specific gravity, % acid, % alcohol, %CO2V.

  • Organoleptic skills/experience.

 

Qualifications:

  • Post-secondary education in Food Production/Science/Oenology or related field.is preferred.

  • Proficiency in Excel and Word.

  • Physical fitness and ability to move hoses, pumps, lift pails of juice for yeast propagation, etc.
