About the Role-
Loch Mór Cider Company is an award-winning, orchard-to-glass
cidery in Prince Edward County , home to over 3,100 trees — including
rare heritage cider varieties. With more than 50 national and
international awards to our name, we’re in the midst of an exciting
orchard expansion planned over the next 2–3 seasons. We’re a small,
tight-knit team, and this role offers the chance to work closely with
ownership and shape the future of an already celebrated cidery .
As of October 1, new ownership will be taking over Loch Mór Cider
Company . We’re building our team for this next chapter and looking
for people who want to help carry forward — and grow — everything
that has made this cidery special.
We are looking for an experienced Head Cider Maker to lead
production at our cidery in Prince Edward County . This role owns the
full cider-making process — from apple sourcing and pressing through
fermentation, blending, and final product — and works closely with
our orchard and cellar team to bring an ambitious, award-caliber
cider program to life.
Responsibilities-
Lead and own all stages of cider production: apple sourcing,
pressing, fermentation, blending, filtration, bottling/canning, and
packaging
Set and drive the quality , style, and direction of the cider program
Develop and manage production schedules, recipes, and
specification sheets
Lead new product development, including seasonal and limited-
release ciders
Maintain accurate production records and ensure compliance with
food safety and regulatory standards
Collaborate with orchard management on fruit sourcing, harvest
timing, and varietal planning
Supervise and mentor the assistant cider maker and any seasonal
cellar/orchard staff
Maintain a clean, organized, and safety-compliant cellar and work
environment
Operate and maintain cidery production equipment
Maintain the quality standards required to enter and compete in
Canadian and international cider competitions
Train tasting room staff on product knowledge, tasting notes, and
the story behind each cider
May occasionally support tasting room operations, particularly
during quieter off-season periods
Reports directly to the owners
Holds hiring and scheduling authority for all cider manufacturing
and orchard employees.
Working Conditions-
This role involves potential exposure to pesticides and other
agrochemicals used in orchard management. Appropriate PPE and
safety training will be provided, and all applications follow label
and regulatory requirements.
Involves physical work, including lifting and carrying at least 50
lbs regularly , and working in wet, cold, and/or muddy conditions
during cellar operations and harvest.

Requirements
Requirements
At least 2 full years of experience as a Head Cider Maker, OR
4 full years of experience as an Assistant Cider Maker or
Assistant Wine Maker
Completion of coursework in oenology or cider making (formal
program, certificate, or equivalent structured training)
Deep working knowledge of fermentation science, blending,
quality control, and cellar operations
Working knowledge of AGCO and other relevant alcohol production
regulations (labelling, production/batch records, excise
requirements); note that the manufacturer’s licence itself is held
by ownership, not this position
Experience managing production schedules, batch records, and
inventory
Comfortable working alongside orchard operations and
understanding fruit quality’s impact on the final product
Willingness and ability to work on-site full-time in Prince Edward
County — no remote or hybrid arrangements available
Valid driver’s license required (occasional deliveries are part of the
role)
Must be at least 19 years of age
Must have, or be able to obtain within one month of hire, Smart
Serve, Food Handler , and WHMIS certifications
Fluent in English required; bilingual (French) is an asset
Availability for overtime hours during fall harvest and pressing
season (approximately September–November) is expected
Must be a Canadian citizen or permanent resident of Canada, due
to status of incoming owners. This position cannot be filled by
candidates requiring work permit sponsorship.
Preferred Qualifications-
Certified Pommelier
Advanced Cider Making certification from the Cider Institute of
North America or a similar recognized program
Professional training through a college/university oenology or
cider-making program
Compensation
Base salary: $75,000–$85,000/year , commensurate with experience
Profit-sharing bonus, to be negotiated
Health Spending Account (HSA) with a $2,000 employer
contribution in year one — OHIP does not cover dental, vision,
prescription drugs, or paramedical services, so this is provided to
fill that gap; may transition to a group benefits plan as the
business grows
